Unripe olives are green; ripe olives are black, deep brown or purple. Freshly picked olives are not immediately suitable for consumption. The black olives are softer and somewhat stronger in flavor. The olive harvest for making olive oil takes place from late October to February. This photo was taken in January in Andalusia.
