The earthy tones of the serving area near the open fire wood oven at Da Faliero E La Maria in the Lago Trasimeno region of Umbria. A warm, welcoming atmosphere. Here they make traditional Italian flat bread, or torta, by hand. You can stand and watch the dough be mixed, kneaded and thrown in the air to create round flat pieces similar to pizza bases. Then the dough is placed onto round hot stones to cook, heated by the wood fire. When they are ready they are slightly crunchy on the outside and soft in the middle. You can then have the filling of your choice - in our case we had Umbrian pecorino cheese and verdura cotta (boiled greens) but there are also sausages and a variety of meat and sea food options.
