Romanesco (Brassica oleracea convar. botrytis var. botrytis), also called fractoli or green tower cauliflower, looks much like cauliflower but has a yellow-green colour. Romanesco gets its name from its first description in 16th-century Italy as broccolo romanesco, or broccoli of Rome. Its growth habit makes it a decorative vegetable. It is an example of a fractal found in nature. In the Netherlands, romanesco first appeared on the market in 1979. It has been grown on a larger scale since 1986.
