The evening begins on a blustery autumn day in the Ossau valley near Buzy on the Route de Bélair in the Pyrenees. A few steps from here is the Étable d'Ossau, one of the best gourmet addresses in Béarn.
It is run by the two chefs Juan Matias Ferreyra, born in Argentina in the 1990s, and Kristian Poppe with their partners. "Eating is sharing" is the quartet's conviction, and every dish is a tribute to the art of farming. Every plate bears witness to this.
