Caol Ila is a distillery near Port Askaig on the island of Islay, Scotland. Caol Ila, the largest Islay distillery operating today, was founded in 1846 by Glasgow distillery owner Hector Henderson. Built on the north side of the island outside Port Askaig, the distillery's name is old Gaelic for 'Sound of Islay'. Water for Caol Ila comes from Loch Nam Ban and the malt comes from Port Ellen on the other side of the island.
In 1999, Caol Ila began working with unpeated malt, a departure from the usual Islay style. Three new bottlings were released in 2002, the first in more than 10 years. More followed in most subsequent years, with the first untasted single malt released in 2006. The core range available  today consists of the Caol Ila Moch, the Distillers Edition, as well as the 12, 18 and 25-year-old single malts.
The typical Caol Ila style could be described as "peaty smoke mingling with a hint of sea salt on the nose and palate".
