Luwakkoffie is the most exclusive and expensive coffee in the world is made from coffee beans from the poop of a civet cat. The coffee is made from coffee beans that have been partially digested by the Indonesian civet cat and then excreted.
The outer layer of the coffee bean is removed during processing. And the remaining beans are cleaned before roasting.
So Kopi Luwak (Kopi= the Indonesian word for coffee, and Luwak is the Indonesian name for the Asian civet cat) is not actually a type of coffee, but a production method. Therefore, the taste can vary significantly depending on the source of the beans and the roasting process.
Wild civet cats eat coffee berries as part of their natural diet. But they are very selective when it comes to coffee berries. They always look for the ripest and tastiest berries. And that is necessary for delicious coffee.
