Cod is traditionally dried in winter along the coast in Norway by hanging it on wooden racks, especially in regions like the Lofoten Islands. The cold, salty sea breeze makes the moisture evaporate from the fish and preserves it well. Drying takes several weeks, depending on the weather and the size of the fish, until it has hardened like a stick.
