This way of brewing coffee, with what is so aptly called a 'Coffee Sock', is typical of Hong Kong for me. I did try to follow the various operations once, but there is so much pouring back and forth that I gave up.
In any case, it tasted fine to me. Yes, the same coffee being made in this picture, I sat down to drink it after taking this picture; sitting at a wobbly folding table, and sitting on a plastic stool on the pavement in front of the small establishment. Deliciously strong and bitter.

After the exhibition ended, I went back with the photo, and one of the postcards made from it, to give it as a gift but unfortunately, it seems the coffee shop no longer exists by now. Unfortunately, this has been the case with many small catering establishments. The many tourists from whom HK derived a large part of its revenue have still not returned even now that Covid's measures have finally been lifted here too.
