Cow parsley, officially known as Anthriscus sylvestris, is a member of the umbellifer family and is related to the familiar (edible) chervil. The plant gets its name from its hollow stems. They can be used to make a kind of flute. The plant occurs in the wild throughout the Netherlands and the southern border areas. Especially where grasses grow wild, you will find cow parsley. This can be in random natural fields, but also in the roadside. You will find cow parsley in bloom from mid-April until June. Without flowers, the plant will flower from September onwards and with a bit of luck it will stay green all winter.
