An impression from an acetaia near Modena (Emilia-Romagna, Italy).

Here the real Aceto Balsamico Tradizionale matures up to 25 years in barrels made of different types of wood.
The wooden barrels remain open during this process so that the balsamic vinegar has the contact with oxygen needed for the maturation.
