Cardoon (Cynara cardunculus) belongs to the forgotten vegetables and is related to the artichoke. A plant from the Mediterranean region. It is still eaten in southern Europe and has been since the 4th century BC. So ancient. Beautiful plants that require a lot of space with lovely grey felt-like leaves. During flowering, they attract butterflies, bees and bumblebees. Pictured here is a late specimen, hardly ever blooming again, but beautiful to dry, with many subtle shades.
